mango coconut jasmine rice pudding 🥭 🥥

If you love mango and coconut this dessert is for you my FRIEND !

It’s also Vegan, Gluten-Free and only sweetened with Maple Syrup!

You want to impress your friends or family next time they come over, this dessert is definitely a crowd pleaser and the best part is that is very easy to make, too.

The king ingredient in this recipe is of course the MOST delicious Ataulfo Mangoes .🥭🥭🥭

Did you know there are 55 types of Mangoes in the world ? Wow 🤩 I was amazed to discover this as well !

I’ve only tried a few kinds myself and I’ve came to realize the most delicious mango is the Honey or Ataulfo Mango . ( for me)


Their Flavor is MOSTLY sweet like honey !

Their Flesh is super yellow (or light orange sometimes), Peachy tropical aroma with smooth, firm flesh without fibers and a small pit.

Honey mangoes are available from March to July. The primary sources are Mexico, Brazil, Peru, and Ecuador.

When fully ripe, the fruit turns deep yellow with slight wrinkles and acquires a flattened oblong shape.

The second important ingredient is the coconut milk .

I’ve used coconut milk made only from one ingredient coconut, no added preservative or guar gum !

And the third ingredient is the organic Jasmine Rice.

I prefer Jasmine rice over the sticky rice, because It has a nutty, buttery, and sweet flavor, which is quite amazing.

Ingredients

Instructions

  1. Bring coconut milk to a boil add the jasmine rice , pinch of salt and cook until soft and fluffy , add maple syrup and a pinch of cinnamon!
  2. Purée the mangoes in a blender !
  3. Assemble the pudding jars by adding 1 layer of mango purée at the bottom , add the cooked coconut jasmine rice , pour a little more coconut milk on top of the rice ( 2 Tbsp in each jar ) and as a final layer add freshly chopped mango !
  4. Decorate with mint and Enjoy !
  5. Keep in the refrigerator!
